More on the chefs

Meet Chef Jeremy Fox: Pioneering a Green Revolution in Gastronomy - Where Heritage Meets Innovation on Every Plate.

Chef Jeremy Fox, an award-winning chef and cookbook author, is renowned for revolutionizing vegetable-centric cuisine. He is the mastermind behind Birdie G’s and the Michelin-starred Rustic Canyon in Santa Monica, showcasing his "seed-to-stalk" philosophy and hyper-seasonal, zero-waste approach.

Earlier Fox's culinary journey, his career took a significant turn at Manresa in Los Gatos, under 3 Michelin starred chef, David Kinch, leading to his groundbreaking venture, Ubuntu in Napa, which was widely acclaimed for its innovative, vegetable-forward menu.

After overcoming personal challenges, Fox returned to the culinary world with renewed focus, emphasizing relationships with local producers and an innovative approach to plant-based dishes. His deeply personal restaurant, Birdie G’s, reflects his heritage and passion for reinventing familiar flavors with a modern twist.

Meet Chef Nicholas Elmi, Crafting Culinary Excellence - From Top Chef to Philadelphia's Gastronomic Luminary.

Chef Nicholas Elmi, renowned for his inventive and refined culinary style, is the celebrated owner of Lark and Laurel restaurants as well as the Landing Kitchen in Philadelphia. His remarkable journey began as a young chef feeding his family, evolving into a prestigious career that led him to win Bravo’s Top Chef Season 11. This victory was a stepping stone to his first restaurant, Laurel, which quickly gained national acclaim. The James Beard Foundation nominated Laurel as one of the “Best New Restaurants” in America, and GQ listed it among the country's ten best.

Chef Elmi's achievements continued with Laurel being awarded four bells by critic Craig Laban and being named the “Best Restaurant in Philadelphia” by Philadelphia Magazine.

His culinary adventure further expanded with his coastal Mediterranean restaurant, Lark in Bala Cynwyd, where the menu spotlights sustainable seafood, craveable hand-made pastas, heritage meats, local vegetables, craft cocktails, and a thoughtfully curated wine list with approachable and elevated options.

Chef’s dedication to the culinary arts is also reflected in his role as Chef Chair for Philadelphia’s Taste of the Nation, supporting the No Kid Hungry organization.

His passion extends beyond the kitchen to his first cookbook, "Laurel: Modern American Flavors in Philadelphia." Chef Elmi's journey from a young chef in Massachusetts to a culinary icon in Philadelphia epitomizes his commitment to excellence, innovation, and community involvement.
